Ingredients
- 50 g sunflower seeds
- 50 g flaxseeds (ground)
- 50 g wheat bran
- 50 g protein powder (neutral (e.g. available at drugstores))
- 2 egg(s), size M
- 250 g low-fat quark
- 1 heaped tsp baking powder
- 1 tsp salt
Instructions
- 1. Turn on your oven and set it to 200 degrees Celsius with top and bottom heat.
- 2. Put all dry ingredients into a large bowl and mix them well.
- 3. Add the quark and the eggs to the bowl.
- 4. Knead the mixture with your hands or a spoon until a smooth dough forms.
- 5. Let the dough rest for 10 minutes so the flaxseeds swell and the dough becomes firmer.
- 6. Shape the dough into a round or oval loaf.
- 7. Place a sheet of baking paper on a wire rack.
- 8. Place the loaf on the baking paper.
- 9. Score the surface of the bread about 1 centimeter deep with a sharp knife (this is optional but looks nice).
- 10. Sprinkle the top generously with sunflower seeds.
- 11. Press the seeds slightly into the dough so they stick.
- 12. Slide the tray into the preheated oven.
- 13. Bake the bread for about 40 minutes until golden brown.
