  1. 1. Turn on your oven and set it to 200 degrees Celsius with top and bottom heat.
  2. 2. Put all dry ingredients into a large bowl and mix them well.
  3. 3. Add the quark and the eggs to the bowl.
  4. 4. Knead the mixture with your hands or a spoon until a smooth dough forms.
  5. 5. Let the dough rest for 10 minutes so the flaxseeds swell and the dough becomes firmer.
  6. 6. Shape the dough into a round or oval loaf.
  7. 7. Place a sheet of baking paper on a wire rack.
  8. 8. Place the loaf on the baking paper.
  9. 9. Score the surface of the bread about 1 centimeter deep with a sharp knife (this is optional but looks nice).
  10. 10. Sprinkle the top generously with sunflower seeds.
  11. 11. Press the seeds slightly into the dough so they stick.
  12. 12. Slide the tray into the preheated oven.
  13. 13. Bake the bread for about 40 minutes until golden brown.
