  1. 1. Take the steaks out of the fridge.
  2. 2. Peel the onions.
  3. 3. Cut the onions in half.
  4. 4. Slice the onions into thin strips.
  5. 5. Heat some oil in a small pot.
  6. 6. Sauté the onions in the pot until they are soft and translucent.
  7. 7. Add sugar, salt, and red wine vinegar.
  8. 8. Reduce the heat.
  9. 9. Cover the pot.
  10. 10. Let the mixture simmer for about 30 minutes.
  11. 11. Season the onion marmalade with pepper at the end.
  12. 12. Season the steaks generously with salt and pepper.
  13. 13. Heat some clarified butter in a pan.
  14. 14. Fry the steaks over high heat for about 2 to 4 minutes on each side.
  15. 15. Wrap the cooked steaks in aluminum foil to keep them warm.
  16. 16. Cut the baguette crosswise into four pieces.
  17. 17. Slice each piece lengthwise to create sandwich halves.
  18. 18. Spread mayonnaise on the inside of the top bread half.
  19. 19. Spread the onion marmalade on the bottom half.
  20. 20. Slice the steaks thinly.
  21. 21. Place the steak slices on the sandwiches.
  22. 22. Close the sandwiches.
