🍰 Carrot Cake, Turnip Cake or Moehren Cake

Ingredients
- 375 g carrot(s) (pre-grated)
- 250 g flour
- 2 tsp baking powder
- 250 g sugar
- 1 tsp cinnamon powder
- 250 ml oil, neutral (e.g. sunflower or rapeseed oil)
- 4 egg(s)
- 200 g almonds, ground
- fat for the pan
- 300 g cream cheese
- 100 g powdered sugar
- 1 packet vanilla sugar
- 1 dash lemon juice
Instructions
- 1. Beat the eggs, sugar, oil, and cinnamon with the mixer until creamy. Add the grated carrots and almonds. Mix the flour with the baking powder and stir it in. Pour the batter into a greased 26cm springform pan.
- 2. Bake the cake in the hot oven at 180 degrees Celsius top and bottom heat for about 40 to 50 minutes. Do a skewer test and consider the experience values of your own oven.
- 3. Stir cream cheese and lemon juice with the mixer on low speed until smooth. Let powdered sugar and vanilla sugar trickle in.
- 4. Let the cake cool down after baking. Apply the frosting with the spreading palette all around.
