🍰 Dreamy Lebkuchen with Chocolate Coating

Ingredients
- 50 g orange peel
- 50 g lemon peel
- 2 egg(s)
- 1 packet vanilla sugar
- 200 g sugar (brown)
- 125 g almond(s) (not peeled, ground)
- 100 g hazelnuts (ground)
- 1 knife tip baking powder
- 1 tbsp gingerbread spice
- 30 wafers
- 175 g dark chocolate
- 1 tsp oil (neutral)
Instructions
- 1. Finely dice the candied orange peel and candied lemon peel into tiny cubes.
- 2. Beat the eggs in a large bowl with an electric mixer on the highest speed for one minute until frothy.
- 3. Add the sugar and vanilla sugar and mix for another two minutes.
- 4. Stir the gingerbread spice mix into the mixture.
- 5. Mix the ground almonds with the baking powder in a separate bowl.
- 6. Gently fold the almond mixture into the egg cream.
- 7. Add the diced candied orange peel, candied lemon peel, and hazelnuts.
- 8. Stir everything briefly on low speed to avoid overworking the dough.
- 9. Let the dough mixture rest for a short while.
- 10. Place one tablespoon of dough onto each wafer.
- 11. Dip a knife in water and spread the dough evenly in a dome shape over the entire wafer.
- 12. Place the wafers on a baking sheet.
- 13. Preheat the oven to 140 degrees Celsius (top and bottom heat).
- 14. Bake the lebkuchen for about 25 minutes in the preheated oven.
- 15. Remove the lebkuchen from the oven after baking.
- 16. Let them cool down completely.
- 17. Roughly chop the chocolate.
- 18. Melt the chocolate with the oil in a double boiler over low heat, stirring constantly.
- 19. Spread the liquid chocolate over the cooled lebkuchen.
- 20. Let the glaze set in the air.
- 21. Serve the lebkuchen once the coating is hard.
