  2. 2. Beat the eggs in a large bowl with an electric mixer on the highest speed for one minute until frothy.
  3. 3. Add the sugar and vanilla sugar and mix for another two minutes.
  4. 4. Stir the gingerbread spice mix into the mixture.
  5. 5. Mix the ground almonds with the baking powder in a separate bowl.
  6. 6. Gently fold the almond mixture into the egg cream.
  7. 7. Add the diced candied orange peel, candied lemon peel, and hazelnuts.
  8. 8. Stir everything briefly on low speed to avoid overworking the dough.
  9. 9. Let the dough mixture rest for a short while.
  10. 10. Place one tablespoon of dough onto each wafer.
  11. 11. Dip a knife in water and spread the dough evenly in a dome shape over the entire wafer.
  12. 12. Place the wafers on a baking sheet.
  13. 13. Preheat the oven to 140 degrees Celsius (top and bottom heat).
  14. 14. Bake the lebkuchen for about 25 minutes in the preheated oven.
  15. 15. Remove the lebkuchen from the oven after baking.
