  2. 2. Put sugar, coconut flakes, and egg whites in a pot. Warm the mixture gently to about 50 degrees Celsius until the sugar melts and slowly combines with the egg whites. Make sure the mixture does not get hotter than 50 degrees.
  3. 3. Place the wafer papers on a baking sheet lined with baking paper. Use two teaspoons to place mounds of the mixture onto the wafer papers. If you lightly sprinkle the baking paper with water beforehand, the wafer papers will not slip as easily when filling.
  4. 4. Bake the coconut macaroons in the preheated oven at 150 degrees Celsius with top and bottom heat for about 20 minutes.
