  1. 1. Rinse the rosemary sprigs under running water.
  2. 2. Shake off the excess water from the rosemary.
  3. 3. Roughly chop the rosemary needles with a knife.
  4. 4. Peel the outer skin off the red onions.
  5. 5. Cut the onions into very thin wedges.
  6. 6. Peel the garlic cloves.
  7. 7. Break the garlic into small pieces.
  8. 8. Place the halloumi cheese into a large bowl.
  9. 9. Add the chopped herbs to the cheese.
  10. 10. Add the small garlic pieces.
  11. 11. Pour the olive oil over the ingredients.
  12. 12. Add the onion wedges to the bowl.
  13. 13. Cover the bowl with a cloth.
  14. 14. Let the mixture marinate for about two hours.
  15. 15. Preferably refrigerate the mixture overnight.
  16. 16. Pat the roasted pepper pieces dry with a kitchen towel.
  17. 17. Clean the arugula of any wilted leaves.
  18. 18. Wash the arugula under cold water.
  19. 19. Shake the water off the arugula.
  20. 20. Cut the buns horizontally in the middle.
  21. 21. Take the herb butter.
  22. 22. Spread the butter onto the cut sides of the buns.
  23. 23. Place a non-stick pan on the stove.
  24. 24. Heat the pan to medium-high heat.
  25. 25. Take the halloumi out of the marinade.
  26. 26. Place the cheese into the hot pan.
  27. 27. Fry the cheese on the first side over high heat.
  28. 28. Fry the cheese on the second side over high heat.
  29. 29. Watch for a cooking time of two to three minutes per side.
  30. 30. Add the marinade with the onions and herbs to the pan.
  31. 31. Fry the onions and herbs briefly.
  32. 32. Remove the halloumi from the pan.
  33. 33. Place the roasted pepper pieces on the bottom bun half.
  34. 34. Place the fried halloumi on top of the peppers.
  35. 35. Distribute the arugula over the cheese.
  36. 36. Add the fried onion wedges on top.
  37. 37. Place the top bun half on as a lid.
  38. 38. Serve the burgers with French fries.
