🍽️ Tender chicken breast with honey-cinnamon plum sauce

Ingredients
- 2 tbsp olive oil
- 800 g chicken breast fillet(s)
- 450 ml chicken broth
- 3 tomato(es)
- salt and pepper
- 125 g dried plum(s)
- 1 tsp honey (liquid)
- 1 tbsp ginger (freshly grated)
- 50 g raisins (or currants)
- 1 pinch(es) turmeric
- saffron
- 150 ml water
- sesame (toasted)
- 1 stick(s) cinnamon
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Remove the skin from the tomatoes.
- 3. Cut the peeled tomatoes into small cubes.
- 4. Heat the oil in a large pot.
- 5. Brown the chicken breast in the hot oil.
- 6. Add the cinnamon stick, tomato cubes, broth, salt, and pepper to the pot.
- 7. Bring the mixture to a boil.
- 8. Reduce the heat to a low setting.
- 9. Cover the pot.
- 10. Let the dish simmer gently for about 30 minutes.
- 11. Remove the lid during the last few minutes of cooking.
- 12. Cook the dried plums with honey, ginger, raisins, turmeric, and saffron in water.
- 13. Cook the plum mixture for about 15 minutes until they are soft.
- 14. Place the cooked chicken breast in a pre-warmed serving dish.
- 15. Keep the chicken breast warm.
- 16. Let the cooking liquid in the pot reduce slightly.
- 17. Add the soft plums to the sauce in the pot.
- 18. Heat the sauce with the plums for about 1 minute.
- 19. Pour the hot sauce over the chicken breast.
- 20. Sprinkle toasted sesame seeds over the dish.
- 21. Serve the chicken with rice or couscous.
