Ingredients
- 750 g pork (from the shoulder)
- 250 g bacon
- 1 bunch cilantro
- 2 chili peppers
- 1 clove garlic
- 1 lime
- 1 lemon
- 1 pinch brown sugar
- 1 tsp salt and pepper
- casings (sausage), (approx. 3 m)
Instructions
- 1. Cut the meat into small cubes.
- 2. Chop the bacon into small pieces.
- 3. Remove the stems from the coriander.
- 4. Chop the coriander leaves roughly.
- 5. Remove the seeds from the chili peppers.
- 6. Slice the chili peppers into rings.
- 7. Finely chop the garlic.
- 8. Grate fine zest from the lemon.
- 9. Grate fine zest from the lime.
- 10. Season the entire mixture with brown sugar.
- 11. Season the mixture with salt.
- 12. Season the mixture with pepper.
- 13. Mix all ingredients well with your hands.
- 14. Push the meat mixture through the meat grinder.
- 15. Carefully fill the mixture into the sausage casing.
- 16. Press the casing every 20 centimeters.
- 17. Twist the casing at the pressed spots to form sausages.
- 18. Place the sausages on the grill.
- 19. Grill the sausages first indirectly over a drip pan.
- 20. Wait until the sausages slightly change color.
- 21. Then grill the sausages directly in the heat.
- 22. Turn the sausages once during direct grilling.
