  5. 5. Remove the seeds from the chili peppers.
  6. 6. Slice the chili peppers into rings.
  7. 7. Finely chop the garlic.
  8. 8. Grate fine zest from the lemon.
  9. 9. Grate fine zest from the lime.
  10. 10. Season the entire mixture with brown sugar.
  11. 11. Season the mixture with salt.
  12. 12. Season the mixture with pepper.
  13. 13. Mix all ingredients well with your hands.
  14. 14. Push the meat mixture through the meat grinder.
  15. 15. Carefully fill the mixture into the sausage casing.
  16. 16. Press the casing every 20 centimeters.
  17. 17. Twist the casing at the pressed spots to form sausages.
  18. 18. Place the sausages on the grill.
  19. 19. Grill the sausages first indirectly over a drip pan.
  20. 20. Wait until the sausages slightly change color.
