Ingredients

- 125 g sugar
- 2 tsp vanilla sugar
- 1 pinch(es) salt
- 250 g quark
- 250 g flour
- 0.5 tsp baking powder
- Frying fat (such as sunflower oil, coconut fat, clarified butter)

Instructions
- 1. Beat the eggs together with the sugar, vanilla sugar, and a pinch of salt using a mixer until the mixture is airy and frothy.
- 2. Stir in the quark until everything is well combined.
- 3. Sift the flour and baking powder (a leavening agent that fluffs up the dough) over the mixture.
- 4. Stir the dry ingredients gently into the dough.
- 5. Let the dough rest for a few minutes.
- 6. Heat the frying oil in a pot or a deep pan to about 170 degrees Celsius.
- 7. Dip a wooden stick (like a skewer) into the oil to check the temperature.
- 8. Wait until small bubbles rise around the wood, then the oil is ready for frying.
- 9. Use an ice cream scoop or two tablespoons to gently slide small portions of the dough into the hot oil.
- 10. Do not fry too many balls at once so the temperature does not drop too much.
- 11. Turn the balls in the oil so they turn golden brown all over.
- 12. Remove the finished balls from the oil with a slotted spoon.
- 13. Let them drain on kitchen paper and cool down briefly.
- 14. Roll them in sugar if you like and enjoy.
- 15. The recipe yields about 20 pieces.
- 16. Let the frying oil cool down and filter it through a coffee filter or a sieve lined with kitchen paper to save it for next time.
- 17. Or put the cooled oil in a plastic bag and dispose of it in the household trash.
