  1. 1. Place the quark in a sieve and let it drain.
  2. 2. Put all ingredients except the raisins into the food processor.
  3. 3. Knead the dough with the dough hook until it is smooth.
  4. 4. Knead the raisins into the dough by hand.
  5. 5. Divide the dough into three equal parts.
  6. 6. Roll each part into a long rope.
  7. 7. Join the three ropes at one end.
  8. 8. Braid the ropes together into a loaf.
  9. 9. Place the braided loaf on a baking sheet lined with baking paper.
  10. 10. Brush the loaf with egg yolk.
  11. 11. Sprinkle almond flakes on top.
  12. 12. Bake the bread for about 30 minutes at 160 degrees Celsius with convection.
