🍽️ Delicious Couscous with Fresh Tomatoes

Ingredients
- 200 g couscous
- 300 ml water (boiling *)
- salt
- 1 onion(s)
- 1 clove(s) of garlic
- 400 g cherry tomato(es)
- 3 tbsp olive oil
- 1 tsp tomato paste
- pepper (freshly ground)
- 1 pinch(es) of sugar
- 2 stalk(s) of parsley, flat
- 2 stalk(s) of mint
- 150 g feta cheese
Instructions
- 1. First, check the package instructions for the couscous. The amount of water can vary by brand. Always follow the instructions on the package.
- 2. Pour boiling, salted water over the couscous in a bowl. Cover the bowl. Let the couscous swell for ten minutes.
- 3. Cut the onions into thin strips. Slice the garlic thinly. Cut the tomatoes in half. Heat the oil in a pan. Sauté the onions and garlic over medium heat until soft. Stir in the tomato paste. Sauté it briefly. Add the tomatoes. Season with salt, pepper, and a pinch of sugar. Simmer the mixture for five minutes over medium heat.
- 4. Pick the parsley and mint leaves off the stems. Chop the herbs finely. Crumble the feta. Fluff the couscous with a fork. Serve the couscous with the tomato mixture. Sprinkle the couscous with feta, parsley, and mint. Drizzle with one tablespoon of oil if desired. Pepper to taste.
