  2. 2. Pour boiling, salted water over the couscous in a bowl. Cover the bowl. Let the couscous swell for ten minutes.
  3. 3. Cut the onions into thin strips. Slice the garlic thinly. Cut the tomatoes in half. Heat the oil in a pan. Sauté the onions and garlic over medium heat until soft. Stir in the tomato paste. Sauté it briefly. Add the tomatoes. Season with salt, pepper, and a pinch of sugar. Simmer the mixture for five minutes over medium heat.
  4. 4. Pick the parsley and mint leaves off the stems. Chop the herbs finely. Crumble the feta. Fluff the couscous with a fork. Serve the couscous with the tomato mixture. Sprinkle the couscous with feta, parsley, and mint. Drizzle with one tablespoon of oil if desired. Pepper to taste.
