🍽️ Kale the Way Grandma Made It

Ingredients
- 2.4 kg kale (frozen)
- 4 onion(s)
- 50 g goose fat
- 1 Liter meat broth (double concentrated (bouillon cube for 2.5 ltr. water dissolved in 1 ltr.))
- 2 tbsp mustard, medium-hot
- 10 Pinkel sausages (*)
- 8 Mettenden (smoked or boiled sausages)
- 500 g bacon (smoked, streaky)
- 8 Kasseler pork chops
- oat flakes
- salt and pepper (from the mill)
Instructions
- 1. Heat the goose fat in a large pot.
- 2. Sweat the finely diced onions in it.
- 3. Add the frozen kale.
- 4. Pour ¾ liter of hot broth over the kale.
- 5. Close the pot with a lid.
- 6. Let the kale thaw over low heat for about 30 minutes.
- 7. Peel 2 to 3 Pinkel sausages.
- 8. Cut the sausages into small pieces.
- 9. Stir the sausage pieces into the kale.
- 10. Add the bacon.
- 11. Add 2 to 3 browned mettwurst sausages.
- 12. Close the pot again.
- 13. Let everything simmer very gently over low heat for about 2 hours.
- 14. Stir the kale occasionally to prevent burning.
- 15. Do not add the pork chop to the pot.
- 16. After 2 hours, remove the bacon and mettwurst from the kale.
- 17. Set the meat and sausages aside.
- 18. Season the kale with salt and pepper to your liking.
- 19. Stir the mustard into the kale.
- 20. Optionally add a crumbled bouillon cube.
- 21. Taste the kale to see if more broth is needed.
- 22. Place the pot with the lid slightly ajar in a cool place.
- 23. Let the kale cool down.
- 24. Reheat the kale the next day.
- 25. Stir the kale occasionally.
- 26. Stir the oat flakes into the kale.
- 27. Cook the oat flakes briefly.
- 28. Decide for yourself how many tablespoons of oat flakes you need.
- 29. Continue cooking the kale until it is creamy.
- 30. Place the meat and sausages in a pot.
- 31. Fill the pot with broth until everything is covered.
- 32. Heat the broth with the meat.
- 33. Let the ingredients steep, but do not boil them.
- 34. Optionally brown the sausages to let excess fat drip off.
- 35. Reheat the pork chops in the broth.
- 36. Calculate at least 1 Pinkel sausage per person.
- 37. Calculate at least ½ mettwurst per person.
- 38. Calculate at least 1 piece of bacon or pork chop per person.
- 39. Serve boiled potatoes as a side dish.
- 40. Serve fried potatoes from the previous day's boiled potatoes as a side dish.
- 41. Drink beer with it.
- 42. Optionally use the smoked variant of the Pinkel sausage.
- 43. Expect the smoked sausage to be slightly more flavorful when cooked in the kale.
- 44. Consider that this dish is definitely not diet food.
