🍽️ Classic Shakshuka with Poached Eggs

Ingredients
- 3 tbsp olive oil
- 1 medium onion (chopped)
- 1 clove garlic (chopped, optional)
- 1 bell pepper (diced)
- 5 tomatoes (ripe, diced, or one can of tomatoes)
- 2 tbsp tomato paste
- 1 tsp, level cumin
- 1 tsp, level paprika powder, sweet
- 1 tsp, level salt
- to taste chili powder (cayenne pepper or pepper to taste)
- 4 eggs
- to taste cilantro (or flat-leaf parsley)
Instructions
- 1. Heat the olive oil in a large pan over medium heat.
- 2. Add the onions, garlic, and bell pepper cubes to the pan.
- 3. Sauté the vegetables, stirring constantly, for about 5 minutes until they are soft and translucent.
- 4. Stir in the tomatoes, tomato paste, and spices.
- 5. Let the sauce simmer uncovered for about 10 minutes.
- 6. Use a spoon to make four small indentations in the sauce.
- 7. Crack one egg into each indentation.
- 8. Place the lid on the pan.
- 9. Simmer for about 5 minutes until the egg whites are set but the yolks remain slightly runny.
- 10. Sprinkle fresh herbs over the top to taste.
- 11. Serve the Shakshuka hot with white bread or pita bread.
