Ingredients
- 1 cucumber(s)
- 2 cups yogurt (Greek)
- 1 cup sour cream quark (40% fat)
- dill
- 4 clove(s) garlic
- olive oil
- herb vinegar
Instructions
- 1. Peel the cucumber and grate it finely.
- 2. Squeeze the grated cucumber pieces firmly with your hands to remove the liquid.
- 3. Discard the squeezed cucumber juice or save it for another purpose.
- 4. Mix the Greek yogurt (a firm, fatty yogurt) with the quark and the squeezed cucumber.
- 5. Press the garlic directly into the yogurt mixture.
- 6. Add fresh dill leaves.
- 7. Season the sauce with a splash of olive oil and some vinegar.
- 8. Pepper the mixture generously and salt it to taste.
- 9. Stir everything well until a creamy consistency forms.
- 10. Serve the tzatziki warm with grilled meat or cold with boiled potatoes.
