🍰 Cinnabon-style Cinnamon Rolls

Ingredients
- 2 packets vanilla pudding powder
- 100 ml water
- 500 ml milk
- 5 tbsp sugar
- 120 g butter
- 2 packets dry yeast
- 2 egg(s)
- 1 tsp salt
- 800 g flour
- flour for the work surface
- 200 g butter (melted)
- 300 g sugar, brown
- 5 tsp cinnamon powder
- 250 g powdered sugar
- 250 g cream cheese
- 120 g butter
- 2 packets vanilla sugar
Instructions
- 1. Bring the milk to a boil in a pot.
- 2. Whisk the pudding powder with cold water until smooth.
- 3. Pour the pudding mixture into the hot milk.
- 4. Cook the mixture briefly while stirring constantly until it thickens.
- 5. Remove the pot from the heat.
- 6. Add the butter and stir until it has completely melted.
- 7. Stir the sugar and eggs into the milk mixture.
- 8. Wait until the mixture is warm to the touch.
- 9. Stir in the dry yeast.
- 10. Mix the salt and flour in a large bowl.
- 11. Pour the pudding milk over the dry ingredients.
- 12. Knead everything into a soft, slightly sticky dough.
- 13. Use the dough hooks of a mixer for this.
- 14. Ensure the dough is wetter than normal yeast dough.
- 15. Let the dough rise in a warm place until it has doubled in size.
- 16. This process takes about 1 to 2 hours.
- 17. Divide the finished dough into two equal halves.
- 18. Generously dust a work surface with flour.
- 19. Roll out the first half of the dough into a rectangle.
- 20. Brush the dough surface with half of the melted butter.
- 21. Sprinkle half of the cinnamon-sugar mixture evenly over it.
- 22. Roll the dough tightly starting from the long side.
- 23. Cut the dough log into pieces about 4 cm wide.
- 24. Repeat steps 19 to 23 with the second half of the dough.
- 25. Line a baking sheet with baking paper.
- 26. Place the cinnamon rolls on the tray with space between them.
- 27. Offset the rows sideways so they have enough space.
- 28. Let the rolls rise again for 30 minutes.
- 29. Ensure they touch slightly after rising.
- 30. Preheat the oven to 200 °C top and bottom heat.
- 31. Bake the rolls for about 20 minutes.
- 32. Ensure they do not become too dark.
- 33. Whisk all ingredients for the frosting into a creamy mixture.
- 34. Spread the frosting over the still warm cinnamon rolls.
