🍽️ Vegan Mayo or Aioli

Ingredients
- 50 ml soy milk (soy drink)
- 150 ml vegetable oil (neutral)
- to taste salt and pepper
- optional garlic clove(s)
- optional vinegar
- optional mustard
- optional maple syrup
Instructions
- 1. Pour the soy milk and oil into a tall, narrow container.
- 2. Make sure both liquids are at the same temperature.
- 3. Submerge the immersion blender to the bottom of the container.
- 4. Turn on the immersion blender and keep it at the bottom.
- 5. Wait five to ten seconds until the mixture becomes creamy and combined.
- 6. Slowly lift the immersion blender to mix the remaining sauce.
- 7. Add about half a teaspoon of salt.
- 8. Season with pepper to taste.
- 9. Stir the spices in well.
- 10. Add vinegar, mustard, or maple syrup if desired.
- 11. For aioli, add one or two crushed garlic cloves.
- 12. Mix the garlic evenly into the sauce.
- 13. Store the sauce in the refrigerator.
- 14. Use the sauce within about one week.
