🍽️ Rich Beef Goulash Soup

Ingredients
- 500 g beef goulash
- 1 large onion(s) (finely diced)
- 2 clove(s) garlic (finely diced)
- 2 tbsp ghee
- 800 ml beef broth
- 150 ml red wine
- to taste salt and pepper
- 3 tsp paprika powder, rose spicy
- 3 tbsp paprika powder, sweet
- 1 tbsp tomato paste
- 2 tbsp sugar
- 4 sprig(s) marjoram (the leaves, roughly chopped)
- 2 bay leaves
- 3 large potato(es) (cut into cubes)
- 1 large carrot(s) (sliced)
- 2 bell pepper(s) (finely diced)
- 0.5 bunch parsley (finely chopped)
Instructions
- 1. Heat clarified butter in a large pot.
- 2. Fry the beef cubes for 5 minutes, stirring occasionally.
- 3. Add the chopped onions and garlic.
- 4. Cook the vegetables for another 5 minutes.
- 5. Deglaze the meat with beef broth and red wine.
- 6. Season the soup with salt, pepper, a pinch of sugar, paprika powder, bay leaves, tomato paste, and marjoram.
- 7. Cover the pot with a lid.
- 8. Let the soup simmer gently over low heat for about 60 minutes.
- 9. Add the potato, pepper, and carrot pieces to the soup.
- 10. Simmer the vegetables for another 20 minutes until tender.
- 11. Stir in the chopped parsley.
- 12. Serve the soup hot with baguette.
