🍰 Quark Muffins with Crumble Topping

Ingredients
- 100 g butter
- 100 g Sugar
- 3 tbsp Cocoa Powder
- 150 g Flour
- 2 tsp Baking Powder
- 2 Egg(s)
- 100 g Sugar
- 100 g Butter (melted)
- 200 g Low-fat Quark
- 0.5 packet Vanilla Pudding Powder
Instructions
- 1. Preheat your oven to 175 degrees Celsius using top and bottom heat (150 degrees Celsius if using fan/convective mode). Line a muffin tin with paper liners.
- 2. Knead the first five ingredients into a shortcrust pastry dough. Take two-thirds of the dough and press it evenly into the bottom of the cups. Set the remaining dough aside.
- 3. Beat the eggs until frothy, then add sugar and melted butter. Stir in skimmed quark (curd cheese) and vanilla pudding powder until the mixture is smooth. Divide the quark filling among the cups. Tear the remaining dough into small pieces and scatter them on top of the quark mixture.
- 4. Bake the muffins for about 20 to 25 minutes. Let them cool down in the tin afterwards.
