🍽️ Alsatian Flammkuchen

Ingredients
- 400 g wheat flour Type 550
- 20 g yeast
- 0.25 Liter water, lukewarm
- 3 tbsp oil
- 125 g smoked bacon
- 500 g onion(s)
- 1 container sour cream
- 1 container sweet cream
- salt and pepper
Instructions
- 1. Mix the yeast with a small splash of water and let the mixture rest for ten minutes.
- 2. Sift the flour into a bowl, add the yeast mixture, the remaining water, the oil and a pinch of salt, and knead everything into a smooth dough. Cover the dough and let it rise in a warm place for thirty minutes.
- 3. In the meantime, cut the bacon into thin strips. Peel the onion, halve it and slice it into thin pieces. Whisk the sour cream with the sweet cream and season with salt and pepper.
- 4. Divide the risen dough into four parts. Roll each piece of dough, preferably on a large sheet of baking paper, into a very thin rectangular plate. Spread one quarter of the cream mixture on each and sprinkle with the onions and bacon strips.
- 5. Bake the flammkuchen individually in a hot oven at 220 degrees convection for ten to fifteen minutes until golden brown.
- 6. Variations: Top the flammkuchen with Münster cheese, Roquefort, mushrooms, pressed and salted garlic.
