  1. 1. Fry the pressed garlic in olive oil. Add the rice and let it become slightly translucent for about one minute. Pour in the water, stir briefly, and let the rice finish cooking without stirring it further.
  2. 2. Cut the onion into fine cubes. Cut the chicken breast into strips. Peel the mango and cut it into cubes. Press the garlic. Cut the tomatoes into quarters.
  3. 3. Fry the onions in olive oil until they are translucent. Add the garlic and fry it briefly. Add the chicken and sear it over high heat. Add the quartered tomatoes and let them simmer for about five minutes.
  4. 4. Season the chicken with Sambal Oelek, turmeric, cumin, salt, and pepper. Pour in the coconut milk. Add coriander and mango, and let the dish simmer on low heat for about 10 to 15 minutes until the meat is cooked through.
  5. 5. Serve the dish together with the rice.
