  1. 1. Put the flour in a large bowl.
  2. 2. Sprinkle the salt to the side of the bowl.
  3. 3. Add the sugar and the egg.
  4. 4. Make a well in the center of the flour.
  5. 5. Add lukewarm water into the well.
  6. 6. Add the water gradually until the dough feels right.
  7. 7. Crumble the yeast into the water.
  8. 8. Stir the yeast with your hand until it is dissolved.
  9. 9. Add the oil and a splash of milk.
  10. 10. Wash the parsley.
  11. 11. Chop the parsley finely.
  12. 12. Halve the onions.
  13. 13. Mince the onions in a food processor.
  14. 14. Put the minced onions in a bowl.
  15. 15. Add the minced meat.
  16. 16. Add 1 teaspoon of salt.
  17. 17. Add the oil.
  18. 18. Do not mix the ingredients yet.
  19. 19. Mince the garlic very finely.
  20. 20. Add the garlic to the minced meat.
  21. 21. Put the peeled tomatoes with juice into the food processor.
  22. 22. Add the tomato paste.
  23. 23. Add the red pepper paste (Biber Salca).
  24. 24. Add the red pepper flakes (Pul Biber).
  25. 25. Add the black peppercorns (Kara Biber).
  26. 26. Add salt.
  27. 27. Adjust the spice amounts to your taste.
  28. 28. Omit the Pul Biber if you prefer it not spicy.
  29. 29. Blend the tomato ingredients in the food processor.
  30. 30. Add the mixture to the minced meat.
  31. 31. Take a dough portion the size of an apple.
  32. 32. Place the portion on the floured work surface.
  33. 33. Shape the portion into a ball.
  34. 34. Do the same with the rest of the dough.
  35. 35. Place the balls side by side with some space between them.
  36. 36. Cover the balls with a damp kitchen towel.
  37. 37. Let the balls rest for 5 minutes.
  38. 38. Mix the yogurt with the egg yolk in a bowl.
  39. 39. Preheat the oven to 220 degrees.
  40. 40. Take the first dough ball.
  41. 41. Cover the remaining balls with the towel again.
  42. 42. Place the ball on flour.
  43. 43. Dust both sides with flour.
  44. 44. Roll the ball out round with a rolling pin.
  45. 45. The dough surface should have about the diameter of a plate.
  46. 46. Place 3 heaped tablespoons of the filling lengthwise on the dough.
  47. 47. Spread the filling thinly with the back of a spoon.
  48. 48. Leave the edges free as they will be folded over.
  49. 49. Fold the edges of the dough from left and right towards the center.
  50. 50. The pide should now have the shape of a boat.
  51. 51. Press the edges firmly with your fingers.
  52. 52. Cut the finished pide into manageable pieces.
  53. 53. Serve the pide with fresh salad.
  54. 54. Add Turkish black tea.
