  1. 1. Wash the potatoes thoroughly. Cut new potatoes into wedges with the skin on. Peel older potatoes first and place them in water briefly. Rinse the wedges to remove excess starch. Let them drain well.
  2. 2. Place the dry potato wedges into a large freezer bag. Add the olive oil and all spices (except the salt). Seal the bag and shake it vigorously until all wedges are evenly coated.
  3. 3. Optionally let the seasoned wedges rest for a while to bind the flavors. Preheat your Air Fryer to 200 °C. Place the potatoes in the basket and cook for 25 to 30 minutes.
  4. 4. Open the fryer halfway through and shake the basket to ensure even crispiness. Check the cooking time, extending it slightly if you prefer them crunchier.
  5. 5. For oven preparation: Preheat the oven to 200 °C with fan setting. Line a rack with baking paper and spread the wedges on it. Bake for 25 to 30 minutes, turning them once halfway through.
  6. 6. Remove the finished wedges from the fryer or oven. Sprinkle with salt. Transfer them to a serving bowl and serve immediately while hot.
