  1. 1. Separate the chilled eggs. Put the egg whites into a large bowl and add a pinch of salt.
  2. 2. Whip the egg whites until stiff. When the foam is almost firm, slowly add about three quarters of the sugar.
  3. 3. Whip the egg yolks with the remaining sugar until creamy.
  4. 4. Mix flour, starch, and baking powder in a separate bowl.
  5. 5. Add the flour mixture and the egg yolks to the egg whites.
  6. 6. Gently fold everything together until you have a uniform batter.
  7. 7. Line a baking sheet with baking paper.
  8. 8. Spread the batter evenly onto the sheet.
  9. 9. Preheat the oven to 180 to 200 degrees Celsius (top and bottom heat).
  10. 10. Bake the sponge for about 10 minutes until golden yellow.
  11. 11. Dust a kitchen towel with sugar.
  12. 12. Place the hot sponge, with the baking paper facing up, onto the towel.
  13. 13. Let the sponge cool down completely.
  14. 14. Wash the strawberries and remove the stems.
  15. 15. Cut the berries into small pieces.
  16. 16. Puree about 150 grams of the berries until smooth.
  17. 17. Whip the cold cream with sugar and vanilla sugar until stiff.
  18. 18. Just before finishing, add the cream stabilizer and the strawberry puree.
  19. 19. Mix everything well.
  20. 20. Fold in the remaining small strawberry pieces.
  21. 21. Chill the cream.
  22. 22. Carefully peel the baking paper off the cooled sponge.
  23. 23. Warm the jam.
  24. 24. Brush the jam evenly over the sponge.
  25. 25. Let the layer cool briefly.
  26. 26. Spread the strawberry cream evenly on top.
  27. 27. Leave the upper edge free so the filling does not squeeze out when rolling.
  28. 28. Now, gently roll the sponge using the kitchen towel.
  29. 29. Optionally, brush the roll with cream.
  30. 30. Decorate it with strawberries or dust it with powdered sugar.
