🍽️ Strawberry Biskuit Roll – Basic Recipe

Ingredients

- 100 g sugar
- 75 g flour
- 30 g starch flour
- 1 knife tip baking powder
- salt
- 350 g strawberries
- 200 g strawberry jam
- 400 g cream
- 50 g powdered sugar
- 2 packets cream stabilizer
- 1 packet vanilla sugar
- powdered sugar (for dusting)
Instructions
- 1. Separate the chilled eggs. Put the egg whites into a large bowl and add a pinch of salt.
- 2. Whip the egg whites until stiff. When the foam is almost firm, slowly add about three quarters of the sugar.
- 3. Whip the egg yolks with the remaining sugar until creamy.
- 4. Mix flour, starch, and baking powder in a separate bowl.
- 5. Add the flour mixture and the egg yolks to the egg whites.
- 6. Gently fold everything together until you have a uniform batter.
- 7. Line a baking sheet with baking paper.
- 8. Spread the batter evenly onto the sheet.
- 9. Preheat the oven to 180 to 200 degrees Celsius (top and bottom heat).
- 10. Bake the sponge for about 10 minutes until golden yellow.
- 11. Dust a kitchen towel with sugar.
- 12. Place the hot sponge, with the baking paper facing up, onto the towel.
- 13. Let the sponge cool down completely.
- 14. Wash the strawberries and remove the stems.
- 15. Cut the berries into small pieces.
- 16. Puree about 150 grams of the berries until smooth.
- 17. Whip the cold cream with sugar and vanilla sugar until stiff.
- 18. Just before finishing, add the cream stabilizer and the strawberry puree.
- 19. Mix everything well.
- 20. Fold in the remaining small strawberry pieces.
- 21. Chill the cream.
- 22. Carefully peel the baking paper off the cooled sponge.
- 23. Warm the jam.
- 24. Brush the jam evenly over the sponge.
- 25. Let the layer cool briefly.
- 26. Spread the strawberry cream evenly on top.
- 27. Leave the upper edge free so the filling does not squeeze out when rolling.
- 28. Now, gently roll the sponge using the kitchen towel.
- 29. Optionally, brush the roll with cream.
- 30. Decorate it with strawberries or dust it with powdered sugar.
