🍽️ Crispy Savoy Cabbage and Potato Dumpling Gratin

Ingredients
- 2 packs HENGLEIN Fine Spaetzle (500 g each)
- 1 small Savoy cabbage (approx. 1 kg)
- 400 g Kasseler (lean (boneless))
- 4 onion(s)
- 2 tbsp vegetable oil
- 500 ml broth
- 200 g sour cream (24% fat)
- 1 tsp mustard (up to 2 tsp, grainy)
- some lovage (- leaves, chopped)
- salt and pepper
- cumin (ground)
- 60 g cheese (grated)
- 2 tbsp chives (rings)
Instructions
- 1. Thoroughly wash the savoy cabbage under running water.
- 2. Cut the savoy cabbage into thin strips.
- 3. Cut the smoked pork into small cubes.
- 4. Peel the onions.
- 5. Slice the onions into rings.
- 6. Heat some oil in a large pan.
- 7. Fry the onion rings until golden brown.
- 8. Remove the fried onions from the pan and set them aside.
- 9. Add the savoy cabbage to the remaining fat in the pan.
- 10. Sauté the savoy cabbage briefly.
- 11. Pour some broth into the pan.
- 12. Add the smoked pork to the pan.
- 13. Add the fried onions back into the pan.
- 14. Place a lid on the pan.
- 15. Let the mixture cook for about 20 minutes.
- 16. Stir the potato dumplings into the mixture.
- 17. Stir the sour cream into the mixture.
- 18. Season the mixture with mustard to taste.
- 19. Season the mixture with lovage to taste.
- 20. Season the mixture with salt to taste.
- 21. Season the mixture with pepper to taste.
- 22. Season the mixture with cumin to taste.
- 23. Transfer the mixture to a baking dish measuring 20 x 30 cm.
- 24. Sprinkle the cheese evenly over the mixture.
- 25. Preheat the oven to 200 °C (convection 180 °C or gas mark 4).
- 26. Place the gratin in the preheated oven.
- 27. Bake the gratin for about 25 to 30 minutes.
- 28. Remove the gratin from the oven when it is golden brown on top.
- 29. Garnish the finished gratin with fresh chives.
- 30. Serve the gratin warm.
