  1. 1. Rinse the artichokes thoroughly under running water.
  2. 2. Carefully cut off the sharp thorns on the outer leaves and the tip using kitchen scissors.
  3. 3. Break the stem off the artichoke right at the base.
  4. 4. Place the prepared artichokes side by side in a large pot.
  5. 5. Pour water into the pot until the artichokes are half-covered.
  6. 6. Season the water with lemon juice, salt, and sugar.
  7. 7. Cover the pot and let the artichokes simmer for about 30 minutes.
  8. 8. Check the cooking time by pulling out an outer leaf.
  9. 9. If the leaf pulls out easily, the artichokes are done.
  10. 10. Cook them a bit longer if the leaf still offers resistance.
  11. 11. Whisk vinegar, mustard, and spices vigorously in a bowl.
  12. 12. Slowly stir in the oil until the sauce becomes creamy.
  13. 13. Fold in the chopped chives (or other fresh herbs) into the sauce.
  14. 14. Add finely chopped capers if you like, but this is optional.
  15. 15. Let the cooked artichokes drain briefly.
  16. 16. Arrange the artichokes on a plate.
  17. 17. Serve the dressing in a small bowl on the side.
  18. 18. Pull off the leaves one by one and dip the base into the sauce.
  19. 19. Bite off the soft flesh from the leaf with your teeth.
  20. 20. Remove the small inner leaves and the fibrous choke to reveal the soft heart.
  21. 21. Enjoy the soft heart as well, which is very delicious.
