🍽️ Artichokes with Herb-Mustard Dressing

Ingredients
- 4 large artichoke(s)
- 1 organic lemon(s)
- salt
- sugar
- 4 tbsp white wine vinegar
- 2 tbsp mustard
- salt and pepper

- 9 tbsp olive oil (mild or rapeseed oil)
- 1 tsp capers (finely chopped (optional))
- 1 tbsp chive rings (fresh)
Instructions
- 1. Rinse the artichokes thoroughly under running water.
- 2. Carefully cut off the sharp thorns on the outer leaves and the tip using kitchen scissors.
- 3. Break the stem off the artichoke right at the base.
- 4. Place the prepared artichokes side by side in a large pot.
- 5. Pour water into the pot until the artichokes are half-covered.
- 6. Season the water with lemon juice, salt, and sugar.
- 7. Cover the pot and let the artichokes simmer for about 30 minutes.
- 8. Check the cooking time by pulling out an outer leaf.
- 9. If the leaf pulls out easily, the artichokes are done.
- 10. Cook them a bit longer if the leaf still offers resistance.
- 11. Whisk vinegar, mustard, and spices vigorously in a bowl.
- 12. Slowly stir in the oil until the sauce becomes creamy.
- 13. Fold in the chopped chives (or other fresh herbs) into the sauce.
- 14. Add finely chopped capers if you like, but this is optional.
- 15. Let the cooked artichokes drain briefly.
- 16. Arrange the artichokes on a plate.
- 17. Serve the dressing in a small bowl on the side.
- 18. Pull off the leaves one by one and dip the base into the sauce.
- 19. Bite off the soft flesh from the leaf with your teeth.
- 20. Remove the small inner leaves and the fibrous choke to reveal the soft heart.
- 21. Enjoy the soft heart as well, which is very delicious.
