  1. 1. Whisk flour, milk, vanilla sugar, and salt with a whisk (a kitchen tool with wires for stirring) until smooth. Stir in the egg yolks. Beat the egg whites with caster sugar until stiff and gently fold them into the batter.
  2. 2. Heat butter in an oven-safe pan (a pan that can withstand high heat). Pour the batter into the pan and sprinkle the raisins on top.
  3. 3. Bake the batter in the preheated oven at approx. 200 °C top/bottom heat (conventional heat without fan) for 15 minutes. Then cut the cake into four pieces. Flip the pieces and bake for another 10 minutes.
  4. 4. Cut the cake into small pieces. Sprinkle them with caster sugar and let them caramelize (turn brown and crispy) in the oven.
  5. 5. Dust the finished cake with powdered sugar (icing sugar) and serve. Tip: Serve with plum compote.
