Instructions
- 1. Take the steaks out of the fridge one hour before cooking to let them reach room temperature.
- 2. Rinse the steaks briefly and then pat them very dry with a kitchen towel.
- 3. Preheat the oven to 85 degrees Celsius. Place a heat-resistant dish (e.g., a baking dish) on the middle rack. Use top and bottom heat (for gas ovens: level 1).
- 4. Sear the steaks in hot oil for two minutes on each side. Season with salt and pepper. Then place them in the preheated dish and let them cook in the oven at the same 85 degrees for 45 to 50 minutes.
- 5. Warm up the plates. You can either warm them together with the hot dish in the oven or heat them briefly in the microwave.
