  1. 1. Rinse the duck under running water.
  2. 2. Thoroughly dry the bird with a kitchen towel.
  3. 3. Rub the duck generously with salt inside and out.
  4. 4. Place the tarragon inside the duck.
  5. 5. Fill the cavity of the duck with apple slices if desired.
  6. 6. Place the duck in a large pan.
  7. 7. Pour boiling water over the meat.
  8. 8. Cover the pan tightly.
  9. 9. Let the duck simmer gently on the stove for about one hour.
  10. 10. Remove the lid from the pan.
  11. 11. Preheat the oven to 150 degrees Celsius with fan assistance.
  12. 12. Place the pan in the preheated oven.
  13. 13. Baste the duck occasionally with its own cooking juices.
  14. 14. Turn the duck around in between basting.
  15. 15. Leave the duck in the oven for a total of about two hours.
  16. 16. Remove the duck from the pan and place it on a rack.
  17. 17. Roast the duck on the rack until golden brown for the last half hour.
  18. 18. Thicken the sauce with a little starch flour.
