🍽️ The Perfect Duck Roast

Ingredients
- 1 duck(s) (approx. 3 kg)
- 1 bunch mugwort
- 2 tbsp salt
- 1 liter water (boiling)
- optional apples
Instructions
- 1. Rinse the duck under running water.
- 2. Thoroughly dry the bird with a kitchen towel.
- 3. Rub the duck generously with salt inside and out.
- 4. Place the tarragon inside the duck.
- 5. Fill the cavity of the duck with apple slices if desired.
- 6. Place the duck in a large pan.
- 7. Pour boiling water over the meat.
- 8. Cover the pan tightly.
- 9. Let the duck simmer gently on the stove for about one hour.
- 10. Remove the lid from the pan.
- 11. Preheat the oven to 150 degrees Celsius with fan assistance.
- 12. Place the pan in the preheated oven.
- 13. Baste the duck occasionally with its own cooking juices.
- 14. Turn the duck around in between basting.
- 15. Leave the duck in the oven for a total of about two hours.
- 16. Remove the duck from the pan and place it on a rack.
- 17. Roast the duck on the rack until golden brown for the last half hour.
- 18. Thicken the sauce with a little starch flour.
