🍽️ Crispy Apple Tarte Tatin

Ingredients
- 200 g flour
- 3 tbsp powdered sugar
- 1 pinch(es) salt
- 1 egg
- 100 g butter (cold)
- 2 tbsp water (ice-cold)
- Caramel (: )
- 750 g apples (firm tart (e.g. Elstar or Pink Lady))
- 125 g powdered sugar
- 2 tbsp lemon juice
- 125 g butter
Instructions
- 1. Put flour, powdered sugar, a pinch of salt, the butter cut into small cubes, the egg, and the water into the food processor.
- 2. Knead the ingredients into a dough using the dough hooks.
- 3. Pulse the machine briefly and finish kneading by hand until the dough is smooth.
- 4. Work quickly so that the butter does not become too soft.
- 5. Press the dough into a flat disc.
- 6. Wrap the disc in plastic wrap.
- 7. Let the dough rest in the refrigerator for 30 minutes.
- 8. Peel the apples.
- 9. Cut the apples into quarters.
- 10. Remove the core from the apple quarters.
- 11. Cut each quarter into three thin wedges.
- 12. Drizzle the apple wedges with some lemon juice.
- 13. Put powdered sugar and 5 tablespoons of water into a cast-iron Tarte Tatin pan.
- 14. Heat the mixture until it reduces to golden-yellow caramel.
- 15. Make sure the caramel does not become too dark.
- 16. Stir the butter pieces into the caramel until they are melted.
- 17. Immediately arrange the apple wedges in a circle in the caramel.
- 18. Simmer the apples over low heat for 4 minutes.
- 19. Preheat the oven to 200 degrees Celsius.
- 20. Take the dough out of the refrigerator.
- 21. Lightly dust a work surface with flour.
- 22. Roll out the dough into a circle using plastic wrap.
- 23. The dough should be about 25 cm in diameter.
- 24. Place the dough on the pan.
- 25. Press the edge of the dough inward into the pan.
- 26. Use a wooden spoon to press the edge firmly.
- 27. Bake the tart in the hot oven for 35 minutes.
- 28. Let the tart cool for 10 minutes afterwards.
- 29. Place a suitable cake plate on top of the pan.
- 30. Press the plate and the pan firmly together.
- 31. Flip the pan over with a swift motion.
