  1. 1. Put flour, powdered sugar, a pinch of salt, the butter cut into small cubes, the egg, and the water into the food processor.
  2. 2. Knead the ingredients into a dough using the dough hooks.
  3. 3. Pulse the machine briefly and finish kneading by hand until the dough is smooth.
  4. 4. Work quickly so that the butter does not become too soft.
  5. 5. Press the dough into a flat disc.
  6. 6. Wrap the disc in plastic wrap.
  7. 7. Let the dough rest in the refrigerator for 30 minutes.
  8. 8. Peel the apples.
  9. 9. Cut the apples into quarters.
  10. 10. Remove the core from the apple quarters.
  11. 11. Cut each quarter into three thin wedges.
  12. 12. Drizzle the apple wedges with some lemon juice.
  13. 13. Put powdered sugar and 5 tablespoons of water into a cast-iron Tarte Tatin pan.
  14. 14. Heat the mixture until it reduces to golden-yellow caramel.
  15. 15. Make sure the caramel does not become too dark.
  16. 16. Stir the butter pieces into the caramel until they are melted.
  17. 17. Immediately arrange the apple wedges in a circle in the caramel.
  18. 18. Simmer the apples over low heat for 4 minutes.
  19. 19. Preheat the oven to 200 degrees Celsius.
  20. 20. Take the dough out of the refrigerator.
  21. 21. Lightly dust a work surface with flour.
  22. 22. Roll out the dough into a circle using plastic wrap.
