🍽️ Crispy Giant Shrimp Tails in Creamy Coconut Curry Sauce

Ingredients
- 1 Shallot(s) (or onion)
- 2 Clove(s) garlic clove(s)
- 2 cm Galangal (or ginger)
- 1 Chili pepper(s) (seeded)
- 1 tbsp Oil
- 450 g Giant shrimp
- little Lime zest
- 1 tbsp Curry powder
- 3 dl Coconut milk
- 2 tbsp Fish sauce
- 1 tsp Sugar
- some Thai basil
- some Salt
Instructions
- 1. Preheat the air fryer to 180 °C.
- 2. Finely chop the shallot, garlic cloves, galangal, and chili pepper.
- 3. Place the chopped vegetables and one tablespoon of oil into the air fryer and cook for 3 minutes.
- 4. Pat the giant shrimp tails dry with kitchen paper and add them to the mixture in the air fryer.
- 5. Cook the shrimp for another 8 minutes until crispy.
- 6. Add the grated lime zest and curry powder, then cook everything for 1 more minute.
- 7. Stir in the coconut milk, fish sauce, and sugar, then heat the sauce for another 3 minutes.
- 8. Roughly chop the Thai basil and stir it into the sauce.
- 9. Season the sauce to taste with a little salt.
- 10. Serve the shrimp with cooked Thai rice.
