  2. 2. Finely chop the shallot, garlic cloves, galangal, and chili pepper.
  3. 3. Place the chopped vegetables and one tablespoon of oil into the air fryer and cook for 3 minutes.
  4. 4. Pat the giant shrimp tails dry with kitchen paper and add them to the mixture in the air fryer.
  5. 5. Cook the shrimp for another 8 minutes until crispy.
  6. 6. Add the grated lime zest and curry powder, then cook everything for 1 more minute.
  7. 7. Stir in the coconut milk, fish sauce, and sugar, then heat the sauce for another 3 minutes.
  8. 8. Roughly chop the Thai basil and stir it into the sauce.
  9. 9. Season the sauce to taste with a little salt.
  10. 10. Serve the shrimp with cooked Thai rice.
