  9. 9. Divide the dough into two halves.
  10. 10. Roll out one half of the dough to about 2 mm thickness.
  11. 11. Cut the dough into 2 x 2 cm squares.
  12. 12. Fill the dough squares with the minced meat mixture.
  13. 13. Press the opposite corners of each square together at the top to form a cross.
  14. 14. Place the dumplings on a floured tray.

  19. 19. Mix the yogurt mixture well.
  20. 20. Heat the butter in a small pan.
  21. 21. Briefly toast the tomato paste and the mint in the butter.

  23. 23. Let the dumplings cool slightly.
  24. 24. Top with the yogurt.
  25. 25. Drizzle the paprika butter over the manti at the end.
  26. 26. Vegetarian Version: Sauté chopped onions in a little butter in a pan.
  27. 27. Replace the minced meat with 4-5 boiled, roughly mashed potatoes.
  28. 28. Season the potatoes with salt, pepper, and paprika powder.
  29. 29. Fill the dough squares with the potato mixture.
  30. 30. Fold the dumplings into triangles.
  31. 31. Instead of paprika butter, drizzle only hot butter over the manti.
  32. 32. Tip: About 200 ml of water should be enough for one egg and 500 g of flour, just try it out.
  33. 33. You can also use 2 eggs for the dough to make it richer.
  34. 34. Then you can use tomato paste instead of paprika paste for the sauce.
  35. 35. Or use mixed/fresh grated pureed tomatoes.
