🍰 Kayseri Manti: Turkish Dumplings with Yogurt Dip

Ingredients
- 500 g flour
- 200 ml water (approx.)
- 1 egg
- 1 tsp salt
- flour (for the tray)
- 250 g minced beef (and minced lamb, mixed)
- 1 onion
- 2 tbsp parsley (chopped)
- salt and pepper
- paprika powder
- 750 g yogurt
- 3 cloves garlic
- 3 tbsp butter
- 2 tbsp paprika paste (hot)
- 1 tbsp mint (dried)
Instructions
- 1. Put the flour, the egg, and the salt into a bowl.
- 2. Add a little water.
- 3. Knead everything into a firm dough.
- 4. Cover the dough.
- 5. Let the dough rest for 30 minutes.
- 6. Finely chop the onions.
- 7. Mix the onions with the minced meat and the parsley.
- 8. Season the filling with salt, pepper, and paprika powder.
- 9. Divide the dough into two halves.
- 10. Roll out one half of the dough to about 2 mm thickness.
- 11. Cut the dough into 2 x 2 cm squares.
- 12. Fill the dough squares with the minced meat mixture.
- 13. Press the opposite corners of each square together at the top to form a cross.
- 14. Place the dumplings on a floured tray.
- 15. Bring salted water to a boil.
- 16. Cook the dumplings for about 10 minutes over medium heat.
- 17. Finely chop the garlic cloves.
- 18. Add the garlic and a pinch of salt to the yogurt.
- 19. Mix the yogurt mixture well.
- 20. Heat the butter in a small pan.
- 21. Briefly toast the tomato paste and the mint in the butter.
- 22. Distribute the cooked dumplings onto plates using a slotted spoon.
- 23. Let the dumplings cool slightly.
- 24. Top with the yogurt.
- 25. Drizzle the paprika butter over the manti at the end.
- 26. Vegetarian Version: Sauté chopped onions in a little butter in a pan.
- 27. Replace the minced meat with 4-5 boiled, roughly mashed potatoes.
- 28. Season the potatoes with salt, pepper, and paprika powder.
- 29. Fill the dough squares with the potato mixture.
- 30. Fold the dumplings into triangles.
- 31. Instead of paprika butter, drizzle only hot butter over the manti.
- 32. Tip: About 200 ml of water should be enough for one egg and 500 g of flour, just try it out.
- 33. You can also use 2 eggs for the dough to make it richer.
- 34. Then you can use tomato paste instead of paprika paste for the sauce.
- 35. Or use mixed/fresh grated pureed tomatoes.
