🍽️ Stuffed Peppers with Minced Meat

Ingredients
- 1 kg minced meat, mixed
- 3 onion(s)
- 2 clove(s) of garlic
- 5 bell pepper(s)
- 1 egg(s)
- 1 can tomatoes, chunky (approx. 400 g)
- 0.25 liter vegetable broth
- 1 tsp, heaped oregano (dried)
- 1 tsp, heaped basil (dried)
- 1 tsp, heaped paprika powder, sweet
- Salt and pepper
- 0.5 tube(s) tomato paste
- 2 tbsp olive oil
Instructions
- 1. Finely chop the onions and garlic.
- 2. Sauté the onion and garlic mixture in olive oil until soft and translucent.
- 3. Let the onion mixture cool down completely.
- 4. Mix the minced meat with the cooled onion mixture, the egg, and the spices.
- 5. Cut off the tops of four bell peppers.
- 6. Rinse the empty bell peppers briefly with water.
- 7. Lightly salt the inside of the bell peppers.
- 8. Fill the bell peppers with the minced meat mixture.
- 9. Place the cut tops back on the stuffed peppers.
- 10. Set aside the remaining minced meat mixture.
- 11. Finely chop the last onion and the last bell pepper.
- 12. Fry the remaining minced meat in olive oil until crumbly.
- 13. Add the chopped onion and pepper and simmer for about 5 minutes.
- 14. Stir in the tomato paste and simmer for another 1 minute.
- 15. Deglaze the mixture with vegetable broth.
- 16. Add the chopped tomatoes.
- 17. Place the four stuffed bell peppers in the pot.
- 18. Simmer them over low heat for about 1 hour.
- 19. Serve them with rice or potatoes.
