Ingredients
- 1.5 kg beef roast
- 3 garlic clove(s) (chopped)
- 2 medium-sized onion(s) (chopped)
- 0.125 Liter red wine, dry
- 0.25 Liter beef broth
- salt and pepper
- mustard
- 2 tbsp oil
Instructions
- 1. Season the meat generously with salt and pepper.
- 2. Coat the meat evenly with mustard.
- 3. Heat the oil in a roasting pan.
- 4. Sear the meat on all sides.
- 5. Deglaze the meat with red wine.
- 6. Let the liquid reduce.
- 7. Add the garlic cloves and onions once the wine has almost evaporated.
- 8. Sauté the vegetables briefly.
- 9. Pour in the broth once the vegetables are lightly browned.
- 10. Place the pot in the preheated oven.
- 11. Roast the meat at 180 degrees Celsius (top and bottom heat) for 2 hours.
- 12. Check on the roast periodically.
- 13. Add water if necessary.
- 14. Season the sauce at the end with salt, pepper, and mustard.
- 15. Thicken the sauce with a little cornstarch if necessary.
- 16. Serve the roast with potato dumplings and red cabbage.
