  1. 1. Drain the sun-dried tomatoes well.
  2. 2. Chop the tomatoes finely.
  3. 3. Place the cream cheese (a soft, fresh cheese) in a bowl.
  4. 4. Add one full tablespoon of crème fraîche (sour cream spread).
  5. 5. Add the pressed garlic.
  6. 6. Add the herbs.
  7. 7. Add the chopped tomatoes.
  8. 8. Stir everything into a smooth cream.
  9. 9. Season the mixture with salt and pepper to taste.
  10. 10. Remove the crusts from the toast bread.
  11. 11. Cut each slice of bread twice crosswise.
  12. 12. You will get four equal squares per slice.
  13. 13. Place one full teaspoon of the cream cheese mixture onto a toast square.
  14. 14. Spread the cream smoothly.
  15. 15. Repeat this for all squares.
  16. 16. Cut the thin bacon slices (smoked pork belly) in half crosswise.
  17. 17. Place one half slice of bacon on top of each cream cheese toast.
  18. 18. Grease a baking sheet.
  19. 19. Place the bites on the sheet.
  20. 20. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  21. 21. Bake the bites for 15 to 20 minutes.
  22. 22. The bacon should be crispy.
  23. 23. Remove the bites from the oven.
  24. 24. Serve them warm.
