  1. 1. Separate the egg yolks from the egg whites. Prepare the fruit: Peel apples, remove the core, cut them into eighths, and slice them thinly, or rinse the berries.
  2. 2. Whisk the egg yolks with sugar, vanilla sugar, flour, milk, and salt until smooth. Beat the egg whites until stiff. Stir the fruit into the batter first, then gently fold in the egg whites.
  3. 3. Melt fat in a pan and bake thick pancakes until golden brown over low to medium heat. Place the pancakes on a plate and sprinkle them with sugar.
  4. 4. This yields about 12 pancakes. Tip: Do not bake the pancakes for too long. They taste best when they are still soft inside.
  5. 5. They pair excellently as a side dish with Rhineland bean soup or other sweet dishes like rice pudding.
