🍽️ Quick and Classic Pork Roast

Ingredients
- 1 kg pork roast (preferably neck)
- 3 onion(s) (sliced into rings)
- 0.75 tbsp mustard
- salt and pepper
- 250 ml water
- olive oil
- to taste garlic
- to taste cornstarch
Instructions
- 1. Preheat a large roasting pan on the stove.
- 2. Add a splash of olive oil to the hot pan.
- 3. Sear the pork roast on all sides until it has a golden-brown crust.
- 4. Remove the meat from the pan and place it on a plate.
- 5. Fry the onions in the remaining fat until golden brown.
- 6. Coat the meat evenly with mustard.
- 7. Season the meat generously with salt and pepper.
- 8. Place the seasoned meat back into the roasting pan.
- 9. Distribute the fried onions over the meat.
- 10. Optionally add halved garlic cloves to the pan.
- 11. Pour some water into the pan.
- 12. Cover the pan tightly.
- 13. Place the pan in the preheated oven for 60 to 75 minutes at 170 degrees Celsius with fan assistance.
- 14. Remove the meat from the oven when it is tender.
- 15. Pour the cooking liquid from the pan into a pot.
- 16. Bring the sauce to a boil in the pot.
- 17. Remove the garlic cloves from the sauce if you prefer.
- 18. Blend the sauce smoothly with a hand blender.
- 19. Thicken the sauce to your liking using cornstarch or by reducing it.
