  1. 1. Preheat a large roasting pan on the stove.
  2. 2. Add a splash of olive oil to the hot pan.
  3. 3. Sear the pork roast on all sides until it has a golden-brown crust.
  4. 4. Remove the meat from the pan and place it on a plate.
  5. 5. Fry the onions in the remaining fat until golden brown.
  6. 6. Coat the meat evenly with mustard.
  7. 7. Season the meat generously with salt and pepper.
  8. 8. Place the seasoned meat back into the roasting pan.
  9. 9. Distribute the fried onions over the meat.
  10. 10. Optionally add halved garlic cloves to the pan.
  11. 11. Pour some water into the pan.
  12. 12. Cover the pan tightly.
  13. 13. Place the pan in the preheated oven for 60 to 75 minutes at 170 degrees Celsius with fan assistance.
  14. 14. Remove the meat from the oven when it is tender.
  15. 15. Pour the cooking liquid from the pan into a pot.
  16. 16. Bring the sauce to a boil in the pot.
  17. 17. Remove the garlic cloves from the sauce if you prefer.
  18. 18. Blend the sauce smoothly with a hand blender.
  19. 19. Thicken the sauce to your liking using cornstarch or by reducing it.
