  1. 1. Wash the rhubarb thoroughly and cut away any damaged spots. You do not need to peel the skin, as this will keep the compote's color more vibrant and intensely red.
  2. 2. Cut the rhubarb into small pieces and place them in a pot. Sprinkle the sugar and vanilla sugar over them and mix everything well. Let the mixture stand for about one hour so that the sugar draws out the water from the rhubarb. Stir occasionally during this time.
  3. 3. Do not add any water at this stage, as it would only dilute the compote. More liquid will be released naturally when you bring it to a boil later.
  4. 4. Cook the mixture while stirring constantly until the rhubarb pieces are soft. Let the compote cool down afterwards and add more sugar if needed.
  5. 5. The compote tastes fantastic on its own, but also pairs perfectly with vanilla ice cream or stirred into plain yogurt.
