Ingredients
- 500 g pork tenderloin(s)
- 1 packet bacon
- 2 cups whipping cream
- 1 can tomato paste
- 300 g tomato(es)
- tomato ketchup
- 2 clove(s) garlic
- paprika powder
- cayenne pepper
- chili powder
- salt and pepper
- rosemary
- thyme
- basil
- butter
- breadcrumbs
Instructions
- 1. Rinse the meat under cold water, pat it dry with a paper towel, and cut it into small, round slices (medallions). Wrap each piece of meat with a strip of bacon.
- 2. Grease a baking dish lightly with fat and place the filet pieces closely together inside.
- 3. Preheat the oven to 180 to 200 degrees Celsius.
- 4. Heat the cream in a pot. Cut the tomatoes into quarters and stir them into the hot cream along with tomato paste and a little ketchup. Press the garlic directly into the mixture. Season the whole thing boldly with spices and fresh herbs to your taste.
- 5. Let the sauce come to a brief boil and then pour it over the filet pieces while still hot. Place a few small pieces of butter on top and sprinkle everything with breadcrumbs. Put the dish in the oven for about 40 minutes at 200 degrees Celsius.
- 6. Fresh baguette goes best with this.
