  1. 1. Rinse the meat under cold water, pat it dry with a paper towel, and cut it into small, round slices (medallions). Wrap each piece of meat with a strip of bacon.
  2. 2. Grease a baking dish lightly with fat and place the filet pieces closely together inside.
  3. 3. Preheat the oven to 180 to 200 degrees Celsius.
  4. 4. Heat the cream in a pot. Cut the tomatoes into quarters and stir them into the hot cream along with tomato paste and a little ketchup. Press the garlic directly into the mixture. Season the whole thing boldly with spices and fresh herbs to your taste.
  5. 5. Let the sauce come to a brief boil and then pour it over the filet pieces while still hot. Place a few small pieces of butter on top and sprinkle everything with breadcrumbs. Put the dish in the oven for about 40 minutes at 200 degrees Celsius.
  6. 6. Fresh baguette goes best with this.
