Ingredients

- 150 g flour
- 150 g sugar
- 0.75 packet baking powder
- 1 Liter juice (orange-passion fruit or Labamba juice)
- 9 tbsp sugar
- 3 packet vanilla pudding powder
- 2 container cream (whipped)
- 2 packet whipping stabilizer
- 50 g powdered sugar
- butter biscuit(s)
- chocolate glaze
Instructions
- 1. Separate the eggs. Carefully lift the egg yolks away from the egg whites.
- 2. Beat the egg whites until stiff using a mixer.
- 3. Add the sugar and the egg yolks to the egg white mixture.
- 4. Mix everything on low speed until well combined.
- 5. Mix flour and baking powder in a separate bowl.
- 6. Sift the flour mixture over the egg base.
- 7. Gently fold the flour mixture into the egg base using a whisk, being careful not to deflate the air.
- 8. Preheat the oven to 200 degrees Celsius (conventional heat).
- 9. Pour the batter into a pan and bake it on the middle rack for 20 minutes.
- 10. Let the cake base cool down completely.
- 11. Prepare the vanilla pudding according to the package instructions.
- 12. Use Labamba juice and sugar for the pudding.
- 13. Let the finished pudding cool down.
- 14. Mix cream, cream stabilizer, and powdered sugar in a bowl.
- 15. Whip the mixture until stiff using a mixer.
- 16. Spread the cooled pudding evenly over the cooled cake base.
- 17. Add the whipped cream on top of the pudding layer.
- 18. Scatter butter cookies evenly over the cream.
- 19. Cover the entire cake with chocolate glaze.
