  2. 2. Work sugar, salt, olive oil, and water into the flour.
  3. 3. Knead everything into a smooth dough.
  4. 4. Cover the dough with a damp cloth.
  5. 5. Let the dough rise in a warm place for about 30 minutes.
  6. 6. Knead the dough briefly again afterwards.
  7. 7. Let the dough rest for another 30 minutes.
  8. 8. Place the minced meat in a large bowl.
  9. 9. Dice the onions into small cubes.
  10. 10. Dice the tomatoes into small cubes.
  11. 11. Chop the parsley finely.
  12. 12. Add the onions, tomatoes, and parsley to the meat.
  13. 13. Add the remaining spices.
  14. 14. Knead the meat mixture thoroughly.
  15. 15. Make sure everything is well combined and uniform.
  16. 16. Line a baking sheet with parchment paper.
  17. 17. Divide the dough into mandarin-sized pieces.
  18. 18. Each piece should weigh about 80 to 100 grams.
  19. 19. Lightly dust a work surface with flour.
  20. 20. Roll out the dough pieces into thin flatbreads.
  21. 21. The flatbreads should be about 3 millimeters thick.
  22. 22. Place the flatbreads on the prepared tray.
  23. 23. Spread 1.5 heaped tablespoons of the meat mixture on each flatbread.
  24. 24. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  25. 25. Bake the Lahmacun for about 10 to 20 minutes.
  26. 26. The dough should be firm and crispy at the end.
  27. 27. Take the baked flatbreads out of the oven.
  28. 28. Chop the iceberg lettuce finely.
  29. 29. Chop the feta cheese finely.
  30. 30. Chop the onions finely.
  31. 31. Chop the tomatoes finely.
  32. 32. Place the chopped ingredients on the hot flatbreads.
  33. 33. Optionally add chili powder and tzatziki.
  34. 34. Roll up the flatbreads.
  35. 35. Enjoy them immediately.
