🍰 Strawberry Cake with Vanilla Pudding

Ingredients
- 2 egg(s)
- 125 g sugar (fine)
- 1 tsp, heaped vanilla sugar
- 125 g flour (sifted)
- 125 g butter, melted
- 1 tsp, level baking powder
- Fat (and breadcrumbs for the pan)
- 500 ml milk
- 2 tbsp sugar
- 1 packet vanilla pudding powder
- 500 g strawberries (washed, hulled, sugared)
- 1 packet cake glaze (red)
- 2 tbsp, level sugar (for the glaze)
- 50 g almond(s) (sliced)
Instructions
- 1. Prepare the pudding according to the package instructions using 500 milliliters of milk and 2 tablespoons of sugar.
- 2. Let the pudding cool down completely.
- 3. Wash the strawberries thoroughly.
- 4. Remove the green stems from the strawberries.
- 5. Cut the strawberries in half.
- 6. Sprinkle the halved strawberries with sugar.
- 7. Whisk the eggs with the sugar and vanilla sugar until frothy.
- 8. Stir the melted butter into the egg mixture.
- 9. Mix the flour with the baking powder.
- 10. Sift the flour mixture over the batter.
- 11. Fold the flour mixture into the batter gently.
- 12. Stir the batter for another 3 minutes.
- 13. Grease a cake pan.
- 14. Sprinkle the greased pan with breadcrumbs.
- 15. Pour the batter into the prepared pan.
- 16. Preheat the oven to 200 degrees Celsius (top and bottom heat).
- 17. Bake the dough in the preheated oven on the middle rack for 15 minutes.
- 18. Let the baked base cool down completely on a wire rack.
- 19. Spread the cooled pudding in mounds over the cooled base.
- 20. Arrange the sugared strawberries on top of the pudding to form a pyramid.
- 21. Mix the juice from the berries with some red fruit juice or water to make 1/4 liter.
- 22. Prepare the cake glaze according to the package instructions with the juice mixture.
- 23. Pour the hot glaze over the strawberries, starting from the top.
- 24. Sprinkle the sliced almonds around the edge of the strawberries.
- 25. Place the cake in the refrigerator for about one hour.
