  3. 3. If using green asparagus, peel only the bottom third of the stalks.
  4. 4. Cut the asparagus stalks diagonally into bite-sized pieces.
  5. 5. Carefully set the asparagus tips aside.
  6. 6. Bring water to a boil and add some salt and sugar.
  7. 7. Add the asparagus pieces to the boiling water.
  8. 8. Cook the pieces for about three to five minutes depending on size.
  9. 9. Add the asparagus tips.
  10. 10. Cook everything for another three to five minutes until the asparagus is tender-crisp.
  11. 11. If cooking green and white asparagus together, put the green asparagus in the water for an even shorter time.
  12. 12. Drain the asparagus.
  13. 13. Save the cooking water for the sauce.
  14. 14. Cut the meat into not-too-thin slices.
  15. 15. Heat a pan and add a little oil.
  16. 16. Fry the meat in the hot pan.
  17. 17. Brown the meat well on both sides.
  18. 18. Season the meat with salt and pepper to taste.
  19. 19. Keep the meat warm in the oven if needed.
  20. 20. Pour off the excess oil from the pan.
  21. 21. Deglaze the pan drippings with cream or a similar liquid.
  22. 22. Stir tomato paste into the pan.
  23. 23. Pour in milk and the saved asparagus water.

  27. 27. Bring the sauce to a boil while stirring.
  28. 28. Cook until the cheese has completely melted.
  29. 29. Let the sauce reduce slightly.
