🍽️ Asparagus in pink basil cheese sauce with fillet of pork, chicken or turkey

Ingredients
- 1 kg asparagus, white (green or mixed)
- sugar
- salt
- 600 g pork fillet(s) (chicken breast or turkey breast fillet)
- 250 ml whipping cream (coffee cream or Cremefine)
- 100 ml milk
- 150 ml cooking water (asparagus water)
- 2 tbsp tomato paste
- 1 tsp basil (dried)
- 2 piece(s) processed cheese (approx. 25 g each)
- 2 slice(s) processed cheese (toast cheese)
- a little salt and pepper
- oil for frying
- optional basil (fresh)
Instructions
- 1. Cut off the woody ends of the asparagus stalks.
- 2. Peel the asparagus completely.
- 3. If using green asparagus, peel only the bottom third of the stalks.
- 4. Cut the asparagus stalks diagonally into bite-sized pieces.
- 5. Carefully set the asparagus tips aside.
- 6. Bring water to a boil and add some salt and sugar.
- 7. Add the asparagus pieces to the boiling water.
- 8. Cook the pieces for about three to five minutes depending on size.
- 9. Add the asparagus tips.
- 10. Cook everything for another three to five minutes until the asparagus is tender-crisp.
- 11. If cooking green and white asparagus together, put the green asparagus in the water for an even shorter time.
- 12. Drain the asparagus.
- 13. Save the cooking water for the sauce.
- 14. Cut the meat into not-too-thin slices.
- 15. Heat a pan and add a little oil.
- 16. Fry the meat in the hot pan.
- 17. Brown the meat well on both sides.
- 18. Season the meat with salt and pepper to taste.
- 19. Keep the meat warm in the oven if needed.
- 20. Pour off the excess oil from the pan.
- 21. Deglaze the pan drippings with cream or a similar liquid.
- 22. Stir tomato paste into the pan.
- 23. Pour in milk and the saved asparagus water.
- 24. Add dried basil to the sauce.
- 25. Add broken pieces of processed cheese corners.
- 26. Add processed cheese slices.
- 27. Bring the sauce to a boil while stirring.
- 28. Cook until the cheese has completely melted.
- 29. Let the sauce reduce slightly.
- 30. Season the sauce with salt and pepper.
- 31. Add the drained asparagus to the pan.
- 32. Add the fried meat to the pan.
- 33. Add fresh basil if desired.
- 34. Let everything simmer together briefly.
- 35. This self-assembled dish makes asparagus appealing to children who never liked whole asparagus stalks.
- 36. Pasta pairs well as a side dish.
- 37. Potatoes are also an excellent side dish.
- 38. A leaf salad goes well with it, of course.
