🍲 Creamy Carrot-Ginger Soup

Ingredients
- 400 g Carrot(s)
- 60 g Ginger (fresh)
- 50 g butter
- 1 tbsp Sugar
- 600 ml Vegetable broth
- 150 ml Coconut milk
- Salt and pepper
Instructions
- 1. Peel the carrots.
- 2. Slice the carrots thinly.
- 3. Peel the ginger.
- 4. Dice the ginger very finely.
- 5. Heat butter in a pot.
- 6. Sauté the carrots and ginger in the butter.
- 7. Sprinkle the sugar over the vegetables.
- 8. Let the sugar caramelize slightly.
- 9. Deglaze the vegetables with broth.
- 10. Add the coconut milk.
- 11. Bring the mixture to a boil.
- 12. Simmer the soup over medium heat for about 20 minutes.
- 13. Blend the soup finely with a hand blender.
- 14. Season the soup with salt.
- 15. Season the soup with pepper.
- 16. Serve the soup with toast bread or baguette.
