🍽️ Fresh Salad with Asparagus and Strawberries

Ingredients
- 750 g asparagus, white
- 750 g asparagus, green
- salt
- 250 g strawberries
- 100 g sugar
- 100 ml balsamic vinegar (white)
- 2 tbsp oil
- 150 g arugula
- 2 tbsp pine nuts
- 1 tsp basil (dried)
- basil (fresh)
Instructions
- 1. Peel the white asparagus and trim off the woody bottom ends.
- 2. Wash the green asparagus and cut off the tough ends as well.
- 3. Boil the white asparagus in salted water for 15 minutes.
- 4. Add the green asparagus to the pot after 5 minutes of cooking time.
- 5. Wash the strawberries and cut them into halves or quarters.
- 6. Melt the sugar in a pan until it caramelizes.
- 7. Carefully deglaze the caramel with 100 ml of hot water and hot vinegar.
- 8. Be careful not to burn yourself on the rising steam.
- 9. Bring the sauce to a boil and let it simmer for 5 to 7 minutes.
- 10. Season the sauce with salt, pepper, and dried basil.
- 11. Stir the oil into the finished sauce.
- 12. Let the cooked asparagus drain well.
- 13. Arrange the arugula and asparagus attractively on the plates.
- 14. Distribute the halved or quartered strawberries over the asparagus.
- 15. Pour the vinaigrette evenly over the salad.
- 16. Let the salad marinate for up to 30 minutes.
- 17. Sprinkle the finished salad with pine nuts.
- 18. Grind fresh pepper over it.
- 19. Each serving contains 270 Kcal.
