  2. 2. Sauté the onion and garlic in the butter. Add the potatoes and carrots and fry briefly. Deglaze with the vegetable broth, cream, and milk. Bring the mixture to a boil and then simmer on low heat for 20 minutes.
  3. 3. Puree the soup until smooth. Season at the end with parsley, salt, and pepper. Tip: You can also fry bacon, but then the soup is no longer vegetarian. For a lower-fat version, use only milk instead of cream.
