🍲 Delicious Potato and Carrot Soup

Ingredients
- 1 onion(s)
- 1 clove(s) of garlic
- 1 tbsp butter
- 500 g potato(es)
- 400 g carrot(s)
- 500 ml vegetable broth
- 1 container cream (approx. 200 g)
- 300 ml milk
- parsley, chopped
- salt and pepper
Instructions
- 1. Peel the potatoes and carrots. Cut or grate them into equal-sized pieces. Finely dice the onion and garlic.
- 2. Sauté the onion and garlic in the butter. Add the potatoes and carrots and fry briefly. Deglaze with the vegetable broth, cream, and milk. Bring the mixture to a boil and then simmer on low heat for 20 minutes.
- 3. Puree the soup until smooth. Season at the end with parsley, salt, and pepper. Tip: You can also fry bacon, but then the soup is no longer vegetarian. For a lower-fat version, use only milk instead of cream.
