🍰 Grandma's Angel Eyes – The Best Cookies

Ingredients
- 240 g flour
- 150 g butter
- 2 egg yolks
- 70 g powdered sugar
- 2 tsp vanilla sugar
- 1 lemon (finely grated zest (or 1 packet Citroback))
- 1 pinch salt
- Raspberry jam (and/or red currant jam)
- Baking paper (for the tray)
- Powdered sugar for dusting
Instructions
- 1. Put all ingredients into the bowl of your mixer.
- 2. Mix the ingredients with the dough hooks until you have a smooth dough.
- 3. Place the bowl in the fridge for 1 to 2 hours.
- 4. Line a baking sheet with baking paper.
- 5. Preheat your oven to 200 degrees Celsius with top and bottom heat.
- 6. Set the fan temperature to about 180 degrees Celsius if you use fan mode.
- 7. Roll the dough into small balls.
- 8. Place the dough balls on the prepared tray.
- 9. Dip the handle of a cooking spoon in flour.
- 10. Press a small indentation into each ball with it.
- 11. Be careful not to poke all the way through the bottom of the ball.
- 12. Stir the jam until smooth.
- 13. Fill the jam into the indentations.
- 14. Use a small spoon if you do not have a piping bag.
- 15. Bake the cookies in the preheated oven for 10 to 15 minutes.
- 16. Keep a close eye on the cookies.
- 17. Take them out before they turn too dark.
- 18. Let the cookies cool down completely.
- 19. Dust the cooled cookies with powdered sugar.
- 20. This recipe yields about 40 cookies.
