  4. 4. Peel the carrots.
  5. 5. Cut the carrots into thin sticks or grate them using a julienne peeler.
  6. 6. Slice the spring onion into thin rings.
  7. 7. Finely chop the garlic, ginger, and chili pepper.
  8. 8. Sear the turkey meat in oil in a large pan.
  9. 9. Remove the seared meat from the pan and set it aside.
  10. 10. Fry the carrot sticks in the remaining fat in the pan.
  11. 11. Add the garlic, spring onion, ginger, and chili.
  12. 12. Sauté the vegetables briefly.
  13. 13. Deglaze the pan with white wine.
  14. 14. Let the liquid reduce slightly.
  15. 15. Add the orange juice and broth to the pan.
  16. 16. Reduce the sauce slightly.
