  1. 1. Put the flour and salt into a bowl and make a small well in the center. Pour the boiling water into the well and stir it into the flour with a cooking spoon first. Once the dough has cooled down enough to handle, knead it into a smooth dough using your hands.
  2. 2. Divide the dough immediately into six equal pieces and roll each piece into a thin flatbread. Cook the tortillas in a non-stick pan without adding extra fat. Cook each side for about one minute until they are lightly browned.
  3. 3. These six tortillas are enough for about two people.
  4. 4. They taste great served with bean paste and cheese.
