🍽️ Katrin's Quark Pancakes without Potatoes

Ingredients
- 500 g quark (not low-fat)
- 8 tbsp flour
- 2 egg(s)
- 3 tbsp sugar
- 1 pinch(es) salt
- 2 tbsp semolina
- 1 splash lemon juice
- to taste currants
- sunflower oil (for frying)
- applesauce
- sugar
Instructions
- 1. Mix quark, flour, eggs, sugar, salt, semolina, lemon, and optionally currants into a batter. If you prefer a firmer batter, add a little more flour.
- 2. Heat some sunflower oil in a pan.
- 3. Since the batter is not moldable, use two tablespoons: one to portion it out and the other to slide the portions into the pan. Fry the quark pancakes on both sides until golden brown.
- 4. Sprinkle them with sugar and serve with apple sauce.
