  1. 1. Mix quark, flour, eggs, sugar, salt, semolina, lemon, and optionally currants into a batter. If you prefer a firmer batter, add a little more flour.
  2. 2. Heat some sunflower oil in a pan.
  3. 3. Since the batter is not moldable, use two tablespoons: one to portion it out and the other to slide the portions into the pan. Fry the quark pancakes on both sides until golden brown.
  4. 4. Sprinkle them with sugar and serve with apple sauce.
