  1. 1. Wash the pork loin thoroughly and pat it dry with a kitchen towel. Line a baking tray with aluminum foil and spread the salt evenly over it.
  2. 2. Season the pork loin generously with salt and pepper. Place it on the bed of salt. Press the garlic through a press or mash it with a knife into a paste. Mix garlic, mustard, and honey in a bowl and brush the sauce evenly over the meat.
  3. 3. Place the roast in a preheated oven at 200 degrees Celsius (top and bottom heat) for about 2 hours. Brush the meat with the sauce repeatedly in between. Make sure it does not get too dark, and cover it with aluminum foil if necessary.
  4. 4. By the end, the meat should have a nice, caramelized crust. Do not turn the meat during cooking. Let it rest for 10 minutes after removing it from the oven to allow the juices to distribute.
  5. 5. Cooking time may vary depending on thickness. Do not overcook the meat to prevent it from drying out. It is done when it is just cooked through. Serve with herb or garlic baguette and potato or pasta salad. Perfect for parties.
